Got to love Emilio Cavallini yesterday at Florens 2012 promoting himself as an artist. Just a small town boy from San Miniato. In Tuscany, all designers are "artists", all wine makers are "farmers", etc. To me it is a deconstructed humility - they feel they have to say how simple they are, how plain - like pane Toscano - but I don't think any of them really believe it. They (the producers of all amazing things from Florence and Tuscany) are really the truffled honey on top of the pecorino - but they just don't want to say it.
